Just Mango

A fresh and fruity mango cake made with Rich's Wilber Farms whipped cream, vanilla sponge layers, fresh mango slices, and a soaking syrup. Perfect for celebrations and seasonal menus.

COOKING TIME

  2. 60 gms Rich's Wilber Farms
  3. 140 ml Rich's Sweetmate
  4. ELEMENT 2: CAKE LAYERING
  5. 400 gms Rich's Wilber Farms
  6. 350 gms vanilla sponge
  7. 60 gms sugar
  8. 200 ml soaking syrup
  9. 80 gms fresh mango (Thin slices)
  10. ELEMENT 3: CAKE DECORATION
  11. 15 gms Rich's Nugel Neutral
  12. 5 gms grated white chocolate
  13. 100 gms fresh mangoes (for decoration)
  14. 2 gms fresh mint sprig
  1. ELEMENT 1: SOAKING SYRUP
  2. Take liquid Rich's Wilber Farms in a bowl
  3. Add Rich's Sweetmate & mix suitably
  4. Keep aside for further application
  5. ELEMENT 2: CAKE LAYERING
  6. Take liquid Rich's Wilber Farms in a bowl
  7. Add sugar & whip until soft and firm.
  8. Trim and slice vanilla sponge into layers. Moist the sponge with soaking syrup.
  9. Pipe Rich's Wilber Farms on sponge edges and place fresh mango slices
  10. Pipe cream on top of mangoes & finish using the palette knife
  11. Place the second layer of vanilla sponge. Moist it with soaking syrup
  12. Pipe Rich's Wilber Farms on sponge edges and place fresh mango slices & pipe cream in the center, finish using the palette knife
  13. Place the third layer of vanilla sponge. Moist with soaking syrup
  14. Finish the cake with Rich's Wilber Farms and pipe rosette on the cake border.
  15. Keep inside the refrigerator
  16. ELEMENT 3: CAKE DECORATION
  17. Remove cake from the refrigerator & sprinkle grated white chocolate through a sieve
  18. Peel fresh mango, cut into cubes & apply Rich's Nugel Neutral
  19. Place fresh mango cubes on top of the cake
  20. Decorate as required
