  5. 50g Rich's Blueberry Nugel glaze

  • Open the nufill tin and make blueberry puree

 

For Blueberry Mousse

  • In a heavy bottom pan boil Rich’s Cremagic & blueberry Nugel
  • Pour boiling mixture over chopped white chocolate and mix until chocolate melts
  • Cool down Blueberry truffle & reserve
  • Whip Rich’s New Niagara Farms until peak consistency & fold into Blueberry truffle

 

Assembling

  • Fold in blueberry mousse in blueberry puree, according to dark to light effect
  • Make layer of each blueberry mousse in glass from dark to light
  • Make rosette of whipped New Niagara Farms & garnish with chocolate cigars
