  3. 30 gms - Rich's Nufill Blueberry
  4. 40 gms White chocolate

  6. 40 gms - Rich's Niagara Farms Gold
  7. 110 gms - Blueberry Truffle
  8. ELEMENT 3: MIRROR GLAZE
  9. 50 gms Rich's Cremagic
  10. 10 gms Rich's Nugel Neutral
  11. 60 gms White Chocolate

  13. 250 gms Rich's Niagara Farms Gold
  14. 150 ml Rich's Sweetmate
  15. 350 gms Vanilla sponge
  16. 150 gms Blueberry cream
  17. ELEMENT 5: CAKE GLAZING & DECORATION
  18. 10 gms Rich's Nugel White
  19. 120 gms Mirror glaze
  20. 1 ml Purple food grade colour
  21. 20 gms Chocolate garnish
  1. ELEMENT 1: BLUEBERRY TRUFFLE
  2. Chop white chocolate and keep it aside in a mixing bowl.
  3. Take liquid Rich's Cremagic and Rich's Nufill Blueberry Nufill in the cooking pan.
  4. Place it on the flame & heat it on medium heat until Rich's Cremagic starts to boil.
  5. Pour boiling Rich's Cremagic over chopped white chocolate and mix until chocolate dissolved completely.
  6. Transfer blueberry truffle in a bowl & keep aside to cool down completely.
  7. ELEMENT 2: BLUEBERRY CREAM
  8. Thaw Rich's Niagara Farms Gold in the refrigerator (2°C to 7°C) 24hr to 36hrs before whipping.
  9. Take liquid Rich's Niagara Farms Gold and whip using a hand whipping machine at high speed.
  10. Whip until the product is soft but firm peak consistency.
  11. Mix blueberry truffle and whipped Rich's Niagara Farms Gold properly.
  12. Keep prepared blueberry cream aside for further application of cake layering.
  13. ELEMENT 3: MIRROR GLAZE
  14. Boil Rich's Cremagic & Rich's Nugel Neutral in a saucepan.
  15. Pour over chopped white chocolate.
  16. Mix using spatula until white chocolate dissolves completely.
  17. Strain through fine sieve & keep aside for further application.
  18. ELEMENT 4: CAKE ASSEMBLING
  19. Thaw Rich's Niagara Farms Gold in the refrigerator (2°C to 7°C) 24hr to 36hrs before whipping.
  20. Take liquid Rich's Niagara Farms Gold (temperature should be between 2°C to 5°C with no ice crystals) and whip using a hand whipping machine at high speed.
  21. Whip until the product is soft but firm peak consistency.
  22. Trim and cut the vanilla sponge into three layers.
  23. Soak each layer properly with Rich's Sweetmate.
  24. Spread blueberry cream over soaked layer.
  25. Repeat the process and assemble a three-layer cake.
  26. Finish the layered cake with Rich's Niagara Farms Gold and keep it inside the refrigerator before glazing.
  27. ELEMENT 5: CAKE GLAZING & DECORATION
  28. Mix Rich's Nugel White & purple colour in a bowl.
  29. Take mirror glaze in a bowl and melt to 40°C.
  30. Temper mirror glaze until temperature reaches between 33°C to 35°C.
  31. Pour tempered mirror glaze on the finished cake & give mega effect with purple coloured Rich's Nugel White.
  32. Decorate with chocolate garnish.
