Dark Cherry Panna Cotta

  1. PANNA COTTA MIXTURE
  2. 500 g Rich's Wilber Farms
  3. 100 ml milk
  4. 10 ml vanilla pod
  5. 100 g castor sugar
  6. 6 g gelatin sheet
  7. 50 ml ice water
  9. ASSEMBLING & DECORATION
  10. 100 g Rich's Wilber Farms
  11. 120 ml Rich's Sweetmate
  12. 20 g Rich's Nufill Dark Cherry
  13. 20 g Rich's Nugel Neutral
  14. 120 g Almond Sponge
  15. 60 g Dark Cherry
  16. 4 g Mint Sprig
  17. 15 g Castor Sugar
  1. PANNA COTTA MIXTURE
  2. Soak the gelatin in ice-cold water and reserve.
  3. Slit and scrape vanilla pod.
  4. Take Rich's Wilber Farms, vanilla pod caviar, milk, and sugar together in a heavy-bottom pan.
  5. Heat until mixture starts boiling.
  6. Remove mixture off the flame and keep aside.
  7. Squeeze out excess water from the soaked gelatin.
  8. Put gelatin in the warm panna cotta and mix until it dissolves completely.
  9. Strain the panna cotta mixture and keep aside to cool down completely.
  11. ASSEMBLING & DECORATION
  12. Take Rich's Wilber Farms and sugar in a whipping machine bowl.
  13. Whip until firm peak consistency. Fill it in a piping bag and reserve for further application.
  14. Take a serving glass and place the almond sponge at the bottom.
  15. Moist almond sponge with Rich's Sweetmate.
  16. Put Rich's Nufill Dark Cherry on top of moist sponge and level it properly.
  17. Pour panna cotta mix on top and keep it inside the refrigerator until set.
  18. Apply Rich's Nugel Neutral to fresh dark cherry.
  19. Remove set panna cotta from the refrigerator and pipe a dollop of Rich's Wilber Farms on top.
  20. Put Rich's Nufill Dark Cherry, fresh dark cherry, and mint sprig on top.
